La Petite Maison's Drink – How to Make It

We present a simplified take on a beverage featured on a new drinks list. It's a batch pre-mixed that's bursting full of flavours of the festive period, making it ideal for hosting a festive gathering. Reserve the remaining citrus syrup you can use for brunch beverages, desserts, or to mix another batch of the drink.

The Bikini Cocktail

Makes enough for 10 guests

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (makes 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Syrup: Put the listed components inside a pan, heat until it reaches a simmer, mixing so the sugar melts. Next, turn off the stove allowing it to cool down entirely. Transfer to a sterilised bottle, seal keeping it chilled, it will last for up to one month.

Preparing the Premix: Pour all the liquid ingredients into one large bottle, leave to sit for 60 minutes, then filter it best through cheesecloth, to ensure it's perfectly clear.

To serve: Add 85ml of your premix into a cocktail shaker containing ice, and stir gently for about 60 seconds to cool it down. Strain into an chilled martini glass or equivalent, garnish with a few cranberries and complete it using a light spray of the essential oil over the top.
